Lemon Meringue Pie

Lemon Meringue Pie Recipe


1 cup Sugar
¼ cup all-purpose flour
2 cups water
1 tbsp butter
1 tsp grated lemon zest
¼ tsp salt
3 tbsp cornstarch
3 egg yolks
¼ cup lemon juice
1 tsp Happy Home© Natural Lemon Flavor

3 egg whites
½ tsp cream of tarter
6 tbsp sugar
1 tsp Happy Home© Natural Lemon Flavor


  1. Blend sugar, salt, flour and cornstarch.
  2. Stir in ½ cup cold water. Heat remaining water and add to mixture.
  3. Cook the mixture in double boiler on low heat until thickened and clear.
  4. Add beaten egg yolks, cook 1 minute longer.
  5. Stir in butter, lemon juice, zest and Happy Home© Natural Lemon Flavor.
  6. Pour in baked pie shell.
  7. Let cool.
  8. Top with meringue.
  9. Bake in moderate oven at 350° F until done.


  1. Beat together egg whites and cream of tartar until foamy.
  2. Gradually add sugar, one tbsp at a time, beating until mixture is stiff and can hold its shape.
  3. Add Happy Home© Natural Lemon Flavor and mix.
  4. Spread on cooled pie & bake.
