20 chocolate sandwich cookies
3 tbsp. butter, melted
30 large marshmallows
2/3 cup half-and-half
1 1/2 tsp Happy Home® Chocolate Extract
1 1/2 tsp Happy Home® Peppermint Extract
1/8 tsp Happy Home® Green Food Color
1 cup heavy cream
Directions:
Thoroughly crush the chocolate cookies in a gallon zip bag and pour in large bowl. Mix in the melted butter well. Once fully combined, press the crumbs onto the bottom and sides of a 9 inch pie pan.
Heat the half-and-half and 30 large marshmallows together over low heat, constantly stirring to incorporate well. Then place slightly cooled pan in freezer or ice bath to cool down for a bit more.
Once cool, add the Peppermint Extract, Chocolate Extract, and Green Food Coloring.
In a large mixing bowl, beat the heavy cream until stiff. Add in the cooled marshmallow mixture and fold together.
Pour filling into the chocolate cookie pie crust (adding a dusting of additional crushed chocolate cookies to the top if desired)
Freeze until very firm (around 2 hours). Remove from the freezer for 15 minutes before serving.
