Cake Ingredients:
1 c. unsalted butter
2 c. sugar
3 eggs
¼ tsp. salt
1 tsp. baking soda
3 c. flour (cake flour, preferred), sifted
1 c. buttermilk
3 tsp. Happy Home® Imitation Butter & Nut Flavoring
Icing Ingredients:
8 oz. cream cheese
¼ cup unsalted butter
1 (16 oz) box of powdered sugar
2 tsp. Happy Home® Imitation Butter & Nut Flavoring
1 c. pecans, chopped (optional)
Directions:
Preheat oven to 350°; grease and flour three 9-inch round cake pans.
Cream butter and sugar together until light and fluffy.
Add eggs, one at a time, making sure they are well-incorporated.
In a small measuring cup, mix baking soda and salt into buttermilk until foamy.
Add flour and buttermilk alternatively, starting and ending with flour; add flavoring.
Divide batter evenly between the cake pans and bake 20-25 minutes, or until done.
For icing: beat cream cheese and butter until smooth; add powdered sugar and beat well. Blend in flavoring and stir in chopped pecans.
Spread a thin layer of icing between cake layers and cover entire cake with frosting.
To achieve the classic yellow tint in the frosting and cake, add one drop of Happy Home® Yellow Food Coloring, if desired.
