Lemon Meringue Pie


1 cup Sugar
¼ cup all-purpose flour
2 cups water
1 tbsp butter
1 tsp grated lemon zest
¼ tsp salt
3 tbsp cornstarch
3 egg yolks
¼ cup lemon juice
1 tsp Happy Home© Natural Lemon Flavor Blend
your own pie crust or try the Perfect Pie Crust


3 egg whites
½ tsp cream of tarter
6 tbsp sugar
1 tsp Happy Home© Natural Lemon Flavor Blend


Blend sugar, salt, flour and cornstarch. Stir in ½ cup cold water. Heat remaining water and add to mixture. Cook the mixture in double boiler on low heat until thickened and clear. Add beaten egg yolks, cook 1 minute longer. Stir in butter, lemon juice, zest and Happy Home© Natural Lemon Flavor Blend. Pour in baked pie shell. Let cool. Top with meringue. Bake in moderate oven at 350° F until done.


Beat together egg whites and cream of tartar until foamy. Gradually add sugar, one tbsp at a time, beating until mixture is stiff and can hold its shape. Add Happy Home© Natural Lemon Flavor Blend and mix. Spread on cooled pie & bake. Enjoy!
