Baked Beans with BBQ Sauce
8 slices bacon, halved
1 medium onion, diced
½ medium green pepper, diced
3 28oz. cans pork and beans
¾ cup Roadkill BBQ Sauce
½ cup brown sugar
¼ cup distilled or cider vinegar
2 tsp dry mustard or 2 tbsp Dijon
Preheat the oven to 325 degrees.
Fry bacon in large skillet until bacon has partially cooked. Remove bacon from skillet and drain on paper towels.
Add onions and peppers to bacon drippings in the skillet and sauté until tender. Add beans and remaining ingredients and bring to a simmer.
Pour flavored beans into a greased 13" x 9" ovenproof pan. Top with bacon, then bake until beans are bubbly and sauce is the consistency of pancake syrup, about 2 hours.
Let stand and thicken slightly, then serve.
